Rửa sạch nấm đùi gà, cắt miếng mỏng. Rửa cần tây và hành boa rô. Cắt cần tây thành khúc ngắn, cọng để riêng, lá để riêng. Cắt hành boa rô thành lát. Cho tất cả vào chén riêng.
Làm nóng chảo, cho dầu ăn vào. Khi dầu nóng thì cho hành boa rô, cọng hành tây và tương ớt Hàn Quốc vào đảo đều. Khi cần tây và hành boa rô lên mùi thơm thì cho nấm đùi gà đã xắt miếng vào đảo đều. Sau đó, nêm 1/2 muỗng cà phê hạt nêm chay, 1 muỗng cà phê đường và 1 muỗng cà phê dầu ớt vào đảo đều. Nếm xem nấm đùi gà xào cay đã vừa ăn chưa và nêm thêm nếu cần. Đảo đều tay đến khi nấm đùi gà chín mềm thì tắt bếp.
